Despite the fact that it's officially Spring, it's been damn cold the last few days and I wanted some chili. I couldn't find a recipe that was really simple, so I came up with this. Yes, it's keto-friendly, but this is so easy and delicious I really recommend making it regardless.
Frito's Quick Chili
28 oz can Rotel
1 red bell pepper (6oz) - chopped
Cheddar cheese (optional)
Brown beef on medium heat in large pot, adding all spices and salt. I eyeballed the amounts, so add to preferred taste. Once browned, draining is optional. I needed the fat so I left it in, but draining would reduce the total calories. Finely chop bell pepper and add, stirring together. Add rotel + 1/3 can of water. Mix and bring to hard boil on high heat for 5 minutes, stirring a couple times. Reduce heat to simmer and cook additional 20 minutes, stirring occasionally. Remove from heat and serve in bowls, topped with cheese (optional).
